There are plenty of ways to save on calories with some of your favorite Superbowl snacks; it’s all about finding some healthy swaps for the less-than-healthy ingredients. I have 3 of your favorite dishes made over to save on calories but not on flavor!

Sweet Potato Skins

Set oven 400 and back 4-5 sweet potatoes for about 50-60 minutes, or until fork tender.

Let them cool completely then cut in half and scoop out the potatoes, leaving about 1/4 inch rim inside the skin. Turn them facedown, brush with olive oil, salt and pepper and bake for about 20 minutes until crispy. Let them cool complete then sprinkle wth cumin or taco seasoning, mozzarella cheese and scallions then bake for about 10 minutes until cheese is melty. Top with salsa or avocados and enjoy!

Baked Buffalo Cauliflower

Mix together 3/4 cup flour (flour of our choice), 1 teaspoon each garlic powder, onion powder and paprika, salt and pepper to taste then pour in 1/2-3/4 cup almond milk or water or blend of milk and water (more water for a thinner batter). Pour in chopped cauliflower (about 1 head) and cover each piece with the batter. Place on baking sheet and bake for 15-20 minutes at 425 until golden brown. While cooking, mix together 2 tablespoons melted butter and 3/4-1 cup of buffalo sauce. Pull cooked cauliflower out of the oven and brush the sauce mixture on top until coated. Bake another 10-12 minutes until bubbly. Dip in your favorite ranch or blue cheese dressing!

Apple Nachos

Thinly slice 5-6 tart apples (honeycrisp and Fuji are the best!) and lay our on a cookie sheet. Drizzle on peanuts putter (drippy is best, any all natural kind with on added ingredients…), coconut shavings, nuts like almonds or pecans, and chocolate chips.
